Gluten-Free Apricot & Coconut Biscuits

Ingredients

  • 110 grams butter
  • 3/4 cup sugar
  • 1 egg
  • 2 Tbsp apricot jam
  • 1 cup rice flour fine ground
  • 1 cup desiccated coconut
  • 1 tsp baking powder

Instructions

  1. Beat butter & sugar together add egg and beat until light and fluffy.
  2. Mix in jam, then add dry ingredients beat until just combined.
  3. Grease a biscuit tray or cover with baking paper.
  4. Place mixture in teaspoonfuls on tray allow room to spread. Flatten slightly with a fork and bake in a preheated moderate oven for approx 10-15 minutes.
  5. Makes about 35 biscuits.
  6. Store in an airtight container when cold.
