Cheats Satay Noodles
Who said ramen had to be tricky? Just a lil bit of peanut butter and chilli and you’ll get a whole bowl of creamy ramen with a kick. Keep it simple and saucy with this easy peanut butter satay recipe.

- 1 pack Maggie 2-minute noodles
- 1 Tbsp Pic's peanut butter
- 1 tsp crushed chilli paste + extra for serving
- 1 egg (optional)
- 1 spring onion, thinly sliced (optional)
- Bring a medium pot of water to the boil.
- Add the noodles from the packet of 2-minute noodles to the boiling water and cook for 1-2 minutes, until just tender. Remove noodles from the water with a slotted spoon and set aside. Toss the noodles with a drizzle of neutral oil, to prevent sticking.
- Add the egg to the boiling water and cook for 4-5 minutes (for soft boiled), or until cooked to your liking. Peel off the shell and cut the egg in half. (optional step)
- Add the peanut butter, chilli paste and 2-minute noodles seasoning to a large serving bowl and mix together. Add ¼ cup of the noodle cooking water and whisk together, until combined and smooth.
- Add the cooked noodles to the bowl and toss together, until coated in the sauce. Add a splash of more water, if needed to thin the sauce.
- Top the noodles with the spring onion and soft boiled egg. Garnish with extra chilli paste, if desired.
