Salmon & Avocado Roll Ups

Serves 4

Sushi-style without the fancy skills or sticky seaweed! These delicious Salmon & Avocado Roll Ups are the MVP for those days where effort feels overrated. Just roll with it!

  • 1x 200g pack Pams cold smoked salmon  
  • 250g Meadow Fresh traditional cream cheese, softened
  • 1 firm-ripe avocado, cut into 1cm thick wedges 
  • ¼ cup finely chopped fresh herbs, such as chives or dill

  1. Lay a piece of cling-film over your bench. 
  2. Arrange half of the salmon slices over the cling-film in a rectangle pattern, making sure there are no gaps. 
  3. Beat the cream cheese briefly in a bowl with a spatula, until it is spreadable. Spread half of the cream cheese over the salmon in an even layer. Place 3-4 wedges of avocado in a row on the end closest to you. Then, using the cling-film as a guide, roll it up into a tight log. 
  4. Pat half of the herbs around the outside of the salmon roll up, then cut into 2cm thick slices. Repeat with the remaining salmon, cream cheese, avocado and herbs. 
  5. Serve with soy sauce for dipping, if desired.
