Baked Potato
The humble spud is easily spruced up with a few minutes in the microwave and a dollop of dairy. Go on, get to it!

Method
- 2 x med/large potatoes
- 125g sour cream
- ½ cup grated cheese
- Salt and pepper
- Fresh chives
- Wash and dry your potatoes.
- Stab each potato with a fork 3-4 times.
- Microwave potatoes for 4 minutes, flip them and then microwave them again for another 3 minutes or until tender.
- Let the potatoes cool.
- Cut the potatoes in half length-ways and scoop out the flesh. Add it to a bowl with the sound cream, cheese, salt and pepper.
- Stuff the mash back into the potato skins and sprinkle with fresh chives
