Can't Beet This Salad
This side salad can’t be beet! Whipped up in a flash, this is the perfect, colourful addition to any plate. Just watch out for white shirts!
Ingredients
Method
- 1 x tin beetroot
- 1/2 block feta
- Fresh parsley
- ¼ cup walnuts
- ½ lemon
- Olive Oil
- Drain and cube the tinned beetroot then add to a bowl.
- Crumble in the feta.
- Finely chop the parsley and add to the bowl with the walnuts.
- Squeeze over the juice of ½ a lemon and drizzle over olive oil.
- Season with salt and pepper
