Ham and Egg Cups
Work smarter, not harder these school holidays. A batch or two of these in the weekend will have the kids’ tummies full the whole holidays (or at least until lunch)!

- 12 pieces shaved ham
- 12 eggs
- 1 ½ cups grated cheese
- Salt and pepper
- Fresh herbs (optional)
- Preheat your oven to 200ºC
- Spray a 12 cup muffin tin
- Line each cup with a slice of ham
- Add a generous pinch of grated
cheese to the bottom of each cup - Crack an egg into each cup
- Season with salt and pepper
- Bake for 12 minutes if you want a
runny yolk, 15 if you want a set yolk. - Use a spoon to remove from the muffin
tin. - Sprinkle with fresh herbs
