Slow Cooker Mexican Inspired Chicken
We know that patience is key and this dish is definitely worth the wait. Simply chuck on the slow cooker and you’ll have delicious Mexican Chicken Burrito Bowls ready before you know it. Easy peasy cooking is breezy!

4 skinless, boneless chicken thighs

1x 300g jar mild salsa

1x 30g pack taco spice mix

Season the chicken thighs with salt.

Heat a drizzle of oil in a medium frying pan over medium-high heat. Cook the chicken for about 2 minutes each side, until browned but not cooked through.

Add the browned chicken thighs to the bowl of your slow cooker. Add the salsa and taco spice mix and toss together, until the chicken is well coated.

Slow cook on the high setting for about 2 hours, until the sauce has thickened and the chicken is very tender.

Shred the chicken apart with two forks.
Tip* Try serving the slow cooked Mexican chicken with burrito bowls! We served ours with rice, lettuce, tomato, sour cream and coriander. Delicious!
