Tomato & Balsamic Grilled Brie
Delicious for dipping! Try this ooey-gooey melted brie with tomato and balsamic, made easy on the BBQ.

1 wheel Brie cheese (125g)

1 200g cherry tomatoes, cut in half

1 Tbsp balsamic glaze

1 handful fresh basil leaves thinly sliced

Preheat your BBQ to high. Set a cast iron skillet over the BBQ grate and set aside to heat up.

Add a drizzle of olive oil to the hot skillet, then place the brie in the centre. Scatter over the cherry tomatoes, drizzle over half of the balsamic glaze and season with salt. Place the BBQ lid down and cook for 5-6 minutes, until the cheese is soft and melty in the centre.

Give the tomatoes a toss in the pan, then drizzle over the remaining balsamic glaze, along with the sliced basil.

Garnish with extra herbs from your garden, if desired. Serve with crackers or bread, for dipping.
